Turnip Latkes

Preparation time: 15 minutes

Cooking time: 16 minutes

Servings: 4


½ cup vegetable oil

2 cups grated turnip

1 tbsp minced shallot

1 large egg, beaten

¼ cup almond flour

¼ tsp kosher salt

¼ tsp cracked black pepper

½ cup sour cream

¼ cup chopped scallions


In your large cast-iron skillet, heat the vegetable oil over medium-low heat.

Meanwhile, combine the turnip, shallot, egg, almond flour, salt, and black pepper in a medium bowl and stir well.

When the oil is hot, spoon ¼ cup of the turnip mixture into the pan and flatten it with the back of a spatula; repeat with the rest of the batter.

Cook for 4 minutes, then carefully slide a spatula under each latke and turn them over. Cook for 4 minutes on the second side.

Transfer the latkes to paper towels to drain. Serve topped with a dollop of sour cream and a sprinkling of scallions.
